Anova Culinary Bluetooth Sous Vide Precision Cooker

Anova Sous Vide Precision Cooker Comparison

Anova Sous Vide Precision Cooker, WIFI 2nd Gen

The Anova Sous Vide Precision Cooker, WIFI 2nd Gen has 900 watts of power, can also be started manually or with a mobile phone and the Anova Culinary app – but this sous vide circulator is leading the way when it comes to cooking as it is also Wi-Fi enabled meaning you can start, stop, monitor or even adjust your cooking from wherever you happen to be!

Anova Sous Vide vs ChefSteps Joule

The ChefSteps JouleChefSteps Joule Sous Vide and the Anova Sous Vide Precision Cooker are quite often compared with each other. The Joule is newer to the market than the Anova and is lighter and smaller, making it easier to operate and store. The design of the Joule is very sleek making it very easy to look at.

The Joule has an extra 300 watts meaning less pre-heating. It also has a slightly higher maximum volume and a slightly wider immersion range. The Anova Precision however can heat water 16 degrees (F) hotter than the Joule.

One advantage or disadvantage, depending on whether you are technically minded, is that the ChefSteps Joule can only be operated from the free mobile app or by using your voice with Amazon Alexa.
The Anova app comes packed with recipes, time and temperature guides, including some that were developed and perfected by J. Kenji Lopez-Alt of Serious Eats. For foods that can vary in doneness, like steak or eggs, there are options in the app for letting you choose how rare you want your steak and how runny you want your eggs.
The Joule app allows you set temperature and time based on recipe, it also has a “visual doneness” scale for most foods, this lets you cook an egg based on how you the white and yolk looks, rather than using a description.

Kitchen Gizmo Sous Vide

The Kitchen Gizmo Simplified Sous Vide Immersion Circulator has a temperature range up to 194 Fahrenheit and a +/- margin of error of less than 1 Fahrenheit. It is ETL approved which means it is product compliant to North American safety standards.
The handle is eronomically designed and comes in three colors: blue, gray and red. The sleeve is removable to make cleaning a breeze.

A cook book of sous vide recipes and a timing chart accompany the Kitchen Gizmo and mean you can get cooking as soon as your sous vide arrives!

What is Sous Vide?

Sous Vide which means “under vacuum” in French uses the control of temperature to deliver cooking results that are consistent, each and every time you cook. Food is cooked in a sealed bag in a water bath, the water is heated either by a sous vide circulator or by a sous vide machine which includes the water container as well. This technique was formerly only available in high end restaurants, but now sous vide is available to home cooks who are looking to produce excellent food results every time.

Advantages of cooking with a Sous Vide

Cooking food with a Sous Vide makes the food more tasty and visually more appealing. The food does not dehydrate or lose it’s shape when it is cooked inside a sous vide bag. None of the flavor or natural color of the food is lost as it is all sealed in!

Cooking your food inside a sealed bag retains the vitamins and minerals that are normally lost in “conventional” cooking. You will also be able to use less salt (if any) in your cooking.

Because you control the exact temperature that your food is cooked at you can create the same dish exactly the same time after time. No more burnt or under cooked food ever again!

Cooking with a Sous Vide frees up your time to do other things! No more hovering over steaks or chicken making sure it is not over cooking. Food can be left in the Sous Vide for hours after it is cooked and it will still be perfect!

Large quantities of food can all be cooked all at once – the only limitation is the size of your container. Imagine ten steaks – all cooked to perfection!

A Sous Vide machine will save you money in many ways. You can use cheaper cuts of meat and when cooked in a Sous Vide ans they will come out juicy and tender. You can bulk buy your meat, freeze it into individual portions and cook it in your Sous Vide from frozen! Also a Sous Vide use much less power than conventional gas or electric ovens.

How to choose a Sous Vide?

Depending on the container you are going to be using as your cooker, you may need to consider the size of your Sous Vide circulator. The smallest, sleekest sous vide tool available (11 inches tall and 1.3 pounds) is the ChefSteps CS10001.

As cooking with a Sous Vide takes quite a long time anyway, the speed at which the it heats the water is not something that is particularly important. Most have 800 watts of power so are quite capable of heating water to the required temperature, but if you know you will be using large pots of water you may like to take a look at the 1100 watt Morning Star Sous Vide.

Temperature control is an important feature as it is this that gives cooking with a Sous Vide it’s consistent results. Look for a took that is precise to 0.2 F / 0.1 C.

Sous Vide circulators have some sort of clip that mean they can fit any sized pot or other heat proof container. Depending on what you are cooking you may consider the minimum depth of water that a machine can cope with. Most can be used with levels of water from 1.5 inches all the way up to 10 gallons.

Some Sous Vides such as the Anova Culinary Bluetooth Sous Vide can be controlled by a mobile app, or you can use your voice with Amazon Alexa. Guided recipes and exclusive features like Visual Doneness guarantee great results.

Voltage warning: Works with 120 V outlets only. Due to our precise heating technology, voltage transformers and converters can damage your Joule, and use outside of North America voids the warranty.

Sous Vide Circulator VS Sous Vide Water Oven

A Sous Vide circulator is a bit like a “portable” water immersion heater. You can attach to any size pot or container of water – some people use tailor made LIPAVI containers or even an Igloo Island Breeze Cooler with a hole made in the lid for your Sous Vide!. The disadvantage of the Sous Vide water oven is that the amount of cooking space you have is pre determined. So, if you think you may need to cook larger amounts of food – say several steaks at once, you may prefer to purchase a circulator and have the benefit of being able to choose the size of water container yourself.

How to cook using a Sous Vide

Attach your sous vide circulator to the side of a pot or container of water. Set the temperature and cooking time according to the food you are cooking and the doneness that you want to achieve. Put your food into a sealable bag, remove the air and place the bag into the water. When cooked the food can be seared, grilled or broiled to give color to the outside layer, making it crispy and golden.

Do you need a Vacuum Sealer?

You do not need a vacuum sealer to use a Sous Vide. Just use the pots you already have and any ziplock-style freezer bags. The air is removed by gently submerging the bag into the water.

What can you cook using a Sous Vide?

Using a Sous Vide is an excellent way of cooking all sorts of food, particularly proteins such as meat (lamb, beef, pork), fish (salmon, trout) and fowl (chicken, duck, turkey), but you can also cook vegetables, soups and even desserts!

Are Sous Vide Machines Worth It?

A sous vide circulator is not a cheap piece of equipment, so you do not want to buy one and just have it lying around the kitchen gathering dust. So, one of the most frequently asked questions about Sous Vide Water circulators is are they worth the money? Let’s take a look at the five top reasons most people say buying a sous vide changed the way they cook for the better!

Cheaper Cuts Of Meat

Because of the succulent, juicy results you achieve using a sous vide water ciculator, you can choose the cheaper cuts of meat that you might once have avoided. This saves you money without having to compromise on the results on your plate.

Less Waste

The guaranteed results achieved with a sous vide means there will be less wasted meals because you will no longer be over cooking your meat or vegetables. You can also cook from frozen (just adjust the timing to allow for the extra cooking time) which means you can bulk buy your meat, chicken or fish and make the most of any bargains you find!

Guaranteed Results

Cooking with a sous vide is a slow process, at a lowish but constant temperature. The results you achieve are pretty much guaranteed. Just check out the recipe book or an app for the “doneness” you want to achieve for your piece of steak, fish or chicken, place it into a bag, then into your machine, set a timer and you are off! Sear your steak or fish when it has finished cooking and you are ready to eat! There is no second guessing or hit and miss cooking with a sous vide – the results are the same time after time.

Frees Up Your Time

Cooking with a sous vide is really a case of throwing whatever you are cooking into a bag, throwing the bag into the water, setting the timer then going off to do whatever else you want to do. No more being stuck in the kitchen, hovering over the grill or the oven, checking to see if your food is done yet. Sous vide cooking is a great time saver in the kitchen – you can even cook from frozen!

Catering For Others

Catering for everyone’s individual tastes is easy when you cook with a sous vide. Each piece of food is in it’s own individual bag which means each one can be cooked for a specific amount of time and be flavored with an individual mix of flavorings so it no longer matters how “done” anyone wants their steak, or which herbs and spices someone does or does not like! With a sous vide circulator, you’ll soon be catering like a professional chef!
