How to choose an Espresso Machine?

What is an Espresso?

Before we decide how to choose an Espresso machine it may be worth actually clarifying what an Espresso is! Contrary to what many of us may thing Espresso is not actually a type of coffee bean or a type of roast. Rather, Espresso is simply a method of producing a cup of coffee –  a way  brewing coffee. Any type of coffee can be brewed as espresso but you will find that some types taste better than others! You may see bags of coffee labelled as espresso because the contents are pre-ground to a fine size that is suitable for espresso brewing, or it is a blend that has been selected to produce a pleasing balance of flavors when it is brewed as espresso.

How Do Espresso Machines Work?

At it’s basic, making an espresso involves pushing hot water through a compact ‘puck’ of grounds at high pressure, usually at around 9 bar which is 9 times the atmospheric pressure at sea level. Most modern domestic Espresso machines operate at 15 bars.

All espresso machines feature boilers that will bring the water to the correct temperature using a heating element. The pressure used to pull a shot is generated by different methods depending on the type of Espresso machine. Older manual machines use a piston, modern domestic machines use steam power or a motor-driven pump and commercial machines use a rotary pump.

One of the most important things when creating a good espresso is keeping the water a consistent heat and a consistent pressure during the pulling process (about 25 to 30 seconds).

Choosing An Espresso Machine

Obviously budget is one of the considerations when it comes to purchasing an Espresso machine, but also keep in mind what you are expecting the machine to produce. How To Brew An Espresso

Here are some general instructions for brewing a cup of Espresso – be sure to read the manual that come with your machine for any instructions specific to your machine.

  • Grinding your beans: As we discuss below, the majority agree that fresh is best, so the first step is to grind your coffee beans. A coarse grind allows the water to pass through too quickly and your brew will not be rich in flavors and acids. If the grind is too fine, the brew will take longer to process, and the coffee will come out bitter. The optimum pull time is between 25 and 30 seconds.
  • Water: Now fill the water reservoir of your espresso machine with water – to get the best tasting coffee it is preferable to used filtered or purified water.
  • Fill your portafilter with coffee: Place your ground coffee into the portafilter basket – machines that can brew double shots will have a single and a double basket. If you are perfecting your Espresso taste you may wish to weigh your grounds – allow 7 to 8 grams of coffee for a single and 14 to 16 grams for a double shot. Tamper the coffee grounds until they are level using about 30 pounds of pressure.
  • Brew process: Replace your portafilter and turn on your coffee machine to start the brewing process. The first drops of delicious coffee will start collecting in the carafe in 10 seconds, and the whole process will be completed within a minute.
  • Crema: Looking for that elusive crema? Crema is that layer of lighter colored foam that sits on the surface of your extracted coffee. It actually consists of tiny bubbles and is created by the reaction between the CO2 being emitted by the coffee grounds coming into contact with hot, pressurized water.

Ground coffee is the easiest to buy and is found in every supermarket – it is ready to brew and does not require any more effort. The negatives of using ground coffee are freshness and grind fineness. As soon as coffee is ground it starts to go stale and lose flavor. The taste is in the bean oils and they start to evaporate once the coffee is ground. When you purchase ground coffee you have no choice how fine or coarse it is ground. If the grind is too fine, the water will not flow through the coffee even under pressure. A grind that is too fine will look like powder and feel like flour when you rub it between your fingers. If the grind is too coarse the water will flow through the coffee too fast and the full flavor will not be extracted. If you do choose ground coffee, store it in an airtight container in a cool, dark area.

If you buy whole coffee beans and grind them shortly before you brew your coffee the flavor will be much stronger and you will be able to taste more subtle flavors in your choice of bean. You will also be able to grind your coffee especially for your espresso coffee machine. You can choose between a burr grinder which produce the most even grind or a blade grinder which are cheaper.
